Cinnamon Bites
Ingredients:
- 250 g plain white flour
- ½ teaspoon baking powder
- 2½ teaspoons ground cinnamon
- ½ teaspoon salt
- 115 g butter, unsalted
- 125 g brown sugar, soft
- 1 egg, large
- 1 teaspoon vanilla essence
- icing sugar for dusting
Method:
Flour mixture:
1. Sift together the flour, baking powder, cinnamon and salt, and set aside.
2. Beat the butter and sugar together until pale and fluffy. Beat in the egg and vanilla, and then αdd the flour mixture to combine.
3. Wrap the dough in cling film and chill for at least 1/2 hour.
4. Form approximately 20 round cookies (2 cm each) from the chilled dough. Arrange on baking trays lined with baking paper (parchment paper), 2.5 cm apart. Chill again for 15 minutes while preheating the oven to 180°C (350°F).
5. Bake for 12 to 15 minutes, until they just start to crack.
Cool on wire racks.
